The pure expression of the terroir of San Juan del Río
Produced by hand in the state of Oaxaca, in the San Juan del Río region, this mezcal is part of the Alipús project, created to support small, traditional producers. Master mezcalero Don Rodolfo Juan Juárez crafts this young mezcal from 100% Espadín agave, grown in siliceous, stony soils. Cooking takes place in a conical stone oven, grinding using a tahona (a type of brewery), natural fermentation in wooden vats, and distillation takes place in copper stills. The result is an expressive, mineral mezcal with an elegant balance of aromas and flavors.
