Alipús San Baltazar Mezcal is handcrafted in the community of San Baltazar Guelavila, Oaxaca, a region renowned for its rich mezcal tradition. It is made with 100% Espadín agave grown in calcareous soils, which influences its mineral character. Its process includes baking in a conical stone oven, milling with a tahona (a traditional Mexican brewery), fermentation in wooden vats, and double distillation in a copper still. It is a young mezcal with a clean profile, marked smoky notes, and a lingering finish that distinguishes it as a contemporary classic.
